Corn muffins go great with a hot bowl of chili and these amped-up corn muffins are an even better match. Our corn muffins have ham and cheese and some fresh veggies and lentils. Yes, lentils. Okay, here we go. This muffin recipe is easy to make and great for breakfast or just as a snack! Plus, the fresh veggies and lentils qualify this muffin recipe to be healthy! lol

Ham & Cheese Muffins Ingredients

Ingredients for Ham & Cheese Muffins:

  • 2 boxes of Jiffy Corn Muffin Mix
  • 1/2 cup of lentils
  • 1/4 cup of diced ham
  • 1/4 cup of Green Pepper, diced
  • 1/4 cup of Red Pepper, diced
  • 1/2 cup of cheese
  • 1 stick of sweet cream butter
Michigan Made Ham & Cheese Muffins

Directions:

Follow directions on Jiffy Cornbread Muffin Mix, stir in lentils, veggies, and diced ham. Spoon mixture into muffin tin and follow baking instructions.
 
Ham & Cheese Muffin for Breakfast
 
Let cool and enjoy with your favorite chili.

    My tummy is rumbling just by looking at the photos! This sounds like a delicious recipe. Your pictures are incredible and make me want to try this more. I love how easy this sounds. Although, when I get in the kitchen, nothing is easy. haha. I love the twist on regular corn muffins. I am going to share this with my boyfriend and see if we can whip it up!

    I’m a huge fan of lentils! I make the green ones all the time with black beans. I’m so impressed with this recipe with the lentils, ham and cheese! Wow. I definitely want to try this!
