Cheese Boards & Creamy Herb Dip

We’re sharing how to make a fresh-from-the-garden creamy herb dip with our mini cheese boards. When it comes to gardening and food security, there’s a throughline. Cheese Boards & Creamy Herb Dip

What do you think about when it comes to food security? As a gardener, for me, the idea of feeding others is planted into the fundamentals and origins of gardening. It’s what we do. We partnered with The Missing Ingredients Project to raise awareness around food insecurity and food deserts in our surrounding communities, along with TRISCUIT Crackers.

What is a food desert?

Did you know approximately 19 million people are living in food deserts? A food desert is a geographic area, either urban or rural, where access to affordable and healthy food options are limited or don’t exist. There are a variety of factors that play into limited access to foods such as fresh fruits and vegetables.

It was a no-brainer to enlist like-minded DIY urban gardening initiatives to roll up their respective sleeves and fight the good fight of helping fill the gaps in food security both locally and across the U.S.

Gardening starts with you

I started gardening because it was what I saw my parents do when I was a kid. Gardening was a great way for my mom to add variety and fresh ingredients to our summertime meals. My mom also canned a lot of what she grew, and those canned vegetables and fruits added lots of nutrition to our late-fall and winter meals. The example of my mom growing her food to help feed a family of ten (four boys and four girls, plus my mom and dad) was one of the primary reasons I got involved in volunteering to work in the local community gardens. You can garden too! It can be a lot of work, but it’s rewarding work, and by doing so, you too can participate in helping to alleviate food shortages by growing kitchen gardens and small-space gardens wherever you reside. Container gardens are an easy and effective way to grow where you are planted, literally.

Local community gardens contribute to local food banks, contribute to local initiatives that help provide meals for home-bound residents and give the communities access to fresh produce. The benefits are many because lots of residents live in food deserts without adequate access to fresh produce. Plus, local community gardens create much-needed green spaces and are a great use of otherwise vacant lots. I also plant extra in our family garden to give fresh produce to friends and family. I also make produce gift baskets to give away to our neighbors.

Another benefit of having a garden is the easy access of walking out my back door to grab fresh herbs to use in our recipes. I created our Mascarpone Herb Spread with a handful of herbs from our garden and paired this dip with TRISCUIT Original Crackers and other TRISCUIT Crackers flavors.

What You’ll Need To Make Our Creamy Herb Dip:

Mascarpone. Cream Cheese.  Blue Cheese. While mascarpone and cream are similar, mascarpone is silkier and has a milder taste. Cream cheese has a stronger flavor and is firmer than mascarpone. However, they both compliment each other very well, especially with the addition of blue cheese. Blue cheese adds a nice tangy bite which brightens this herbaceous dip and makes it taste like summer.
 
Fresh Thyme. Oregano. Sage. Here come the herbs! I love summertime herbs, and as a matter of fact, I love how this trio of fresh thyme, oregano, and sage adds layers of flavor with every bite. Each herb brings its unique flavor profile to this dip and makes it so much more than the sum of its ingredients. I also love mixing things up and using different herbs like fresh rosemary, French tarragon, and mint. By growing a mix of herbs, you will discover flavor combinations you will love.  
 
Extra Virgin Olive Oil. Sea Salt. Freshly Cracked Black Peppercorns. Adding extra virgin olive oil gives this dip a slightly sweet and velvety character. It also loosens things up and makes the dip spreadable. I love using an EVOO with medium to heavy floral notes. Adding sea salt and freshly cracked black peppercorns to taste is never bad either.

How We Eat TRISCUIT Crackers Paired With Cheese Boards

My mom’s love for TRISCUIT Crackers has continued to rub off on me to this day! The how and what we were raised eating and enjoying has a tremendous influence on what we carry with us into adulthood. Now that I think about it, my mom and dad were the original influencers. I loved pairing our herb dip with TRISCUIT Original Cracker and TRISCUIT Cracker flavors because the crackers are light and crispy and hold up with a smear of herb dip and a little bit of fruit and cheese. Creamy Herb Dip Recipe

Ingredients:

  • 1 8-ounce package of cream cheese
  • 1 5-ounce container of mascarpone cheese 
  • 1 4-ounce of crumbled blue cheese
  • 2 tbsp extra virgin olive oil
  • 2 tbsp fresh oregano
  • 1 tbsp fresh sage
  • 1 tbsp fresh thyme 
  • sea salt to taste
  • freshly cracked black peppercorns to taste
  • Wedges of lime or lemon

Directions:

  1. Combine all ingredients except the crumbled blue cheese into a food processor and mix until smooth. 
  2. Add sea salt and freshly cracked black peppercorns to taste.
  3. Spoon into a serving bowl and fold in the crumbled blue cheese.
  4. Divide into individual ramekins and garnish with fresh herbs and a wedge of lime or lemon.
  5. Serve.

How to Make Cheese Boards

Here is how we put our cheeseboards together. Use two small cutting boards, divide the TRISCUIT Crackers between the two boards, and the blueberries, strawberries, and blackberries. Place the grapes on the cutting boards along with your choice of cheeses. You can also add an assortment of charcuterie meats like spicy calabrese, salami, prosciutto, and mortadella. Place a ramekin filled with Herb Dip on each cheese board and serve.

Now that you have the recipe, all you need to do now is grab the ingredients from your local Meijer, in-store or via delivery/pickup, and put it all together.
