Our Butterfinger Cookie S’mores with Summer Fruit is a pretty awesome redo. We’ve taken a favorite autumn classic recipe and tweaked it just a smidgen. Now, you may think the Graham cracker, fire-roasted marshmallow, and chocolate bar original is going to be hard to beat, but wait into you get one of these babies into your mouth.  I’ll be the first to admit they’re pretty freaking awesome! And indulging in such an s’mores delight mid-summer doesn’t mean we’re chomping at the bit to get to October either. What it does mean though is that we absolutely love a gooey and decadently good s’mores anytime of the year.

Remember the first time you roasted a marshmallow on a stick and watched the soft white fluffy sweetness become golden brown? Or if you are like me the first time I roasted marshmallows I burned the first several to a complete and utter crisp (they looked like charred shoe leather). But then the moment of truth came when you slide the perfectly roasted marshmallow sweetness between two Graham crackers and a slab of milk chocolate! Yumville!  So, we put our pretty lil’ heads together and came up with our very own summertime version with a couple of twists and delicious turns. Standing in for the Graham cracker we have (drum roll please!) NESTLÉ® TOLL HOUSE® Cookies & More with Butterfinger® Baking Bits! We whipped up a batch of these babies muy pronto! After they cooled a bit we slathered on Marshmallow cream and added slices of fresh strawberry, a few blackberries then drizzled them with a pan roasted blueberry and blackberry simple syrup! Doesn’t that sound like an incredibly decadent kick in the shorts?! We thought so too.

They are so easy to make, no campfire required. All you need is Nestle Toll House Baking Mix, a smear of marshmallow cream, fresh fruit and douse it all on dark fruity simple syrup and PRESTO you’re done! A party in your mouth can’t get any simpler than this fun s’mores creation.

Ingredients:

Directions:

After the cookies have cooled and are safe enough to handle, turn cookies upside down. {Just follow the recipe on the back of the box to make the cookies!}

Apply one (1) tablespoon of marshmallow creme to the bottom of each cookie and spread it around.

Add slices of fresh strawberry, and whole blueberries and blackberries.

Drizzle a single tablespoon of blueberry and blackberry simple syrup over each cookie.

How to make Blueberry & Blackberry Simple Syrup

How to make Blueberry & Blackberry Simple Syrup

Directions:

To make a Blueberry & Blackberry simple syrup pour 2 cups of water and 2 cups of sugar into a sauce pot, bring the mixture to a boil over medium-high heat. Add 1/3 cup fresh blueberries and 1/2 cup of blackberries. Bring the mixture to a boil. Use a muddler or a fork to smash the fruit against the side of the pan to release the juice. Let the mixture cook for another 5 minutes then remove from heat. Cover the pot with a lid and allow the blueberry and blackberry

How to make Blueberry & Blackberry Simple Syrup

Bring the mixture to a boil. Use a muddler or a fork to smash the fruit against the side of the pan to release the juice. Let the mixture cook for another 5 minutes then remove from heat. Cover the pot with a lid and allow the blueberry and blackberry simple syrup to steep for 12 – 15 minutes. Strain the mixture through fine mesh sieve into a Mason jar and refrigerate until ready to use.
