This loaded Chicken Salad bowl is a fresh, protein-packed meal with bold flavors and great texture.

Tender greens, grilled chicken, crunchy walnuts, and creamy tzatziki dressing make this a satisfying, healthy option for lunch or dinner.

At the beginning of the year, we all strive to eat healthier and do better. 

 While we’re all about changing our diets and exercising, one thing we don’t want to sacrifice is good food. 

I am a huge fan of a good salad, and this chicken salad has all the right ingredients. 

From hard-boiled eggs, to seasoned chicken and cucumbers, it’s a salad I can eat on the daily. 

I also love the idea of making these chicken salad bowls ahead of time, making meal prep super easy!

What You Will Need:

Chicken Breasts. A lean protein source that helps keep you full and provides essential amino acids for muscle growth and repair—grilled or roasted chicken pairs well with the freshness of the greens.

Veggies: Arugula. Spinach. English cucumber. Mushrooms. Tomatoes. Arugula adds a peppery bite that enhances the overall flavor of the salad. It’s also packed with antioxidants, vitamins A, C, and K, and supports heart health.

Spinach’s mild, slightly sweet taste balances the boldness of arugula. Cucumbers add crunch and hydration. These juicy, sweet tomatoes balance the dish with acidity and natural sweetness. 

Eggs. Eggs bring an additional protein boost, healthy fats, and essential nutrients like choline, which support brain function.

Walnuts or pecans. Nuts add a crunchy texture, healthy fats, and omega-3 fatty acids that help reduce inflammation and support heart health.

Shredded Cheese. Cheese adds creaminess and depth of flavor while providing calcium and protein. 

Dressing. We paired the Marzetti Simply Creamy Greek Tzatziki Dressing & Sauce with our Loaded Chicken Salad Bowls for an easy 5-day meal prep.

Ingredients per bowl:

1 serving

  • 1 ½  cup of baby arugula
  • 1 ½ cup of baby spinach
  • 2 tbsp Marzetti Simply Creamy Greek Tzatziki Dressing & Sauce
  • 3-4 ounces of chopped chicken breasts (grilled, roasted or baked)
  • 5 slices of fresh English cucumber
  • ¼ c chopped mushrooms
  • ½ hard-boiled eggs
  • 3 tbsp chopped walnuts or pecans
  • 3 tbsp shredded cheese
  • 5 cherry tomatoes

Directions:

  1. Prep your ingredients. Wash and dry arugula and spinach—next, slice cucumbers, mushrooms, cherry tomatoes, and hard-boiled eggs. Chop walnuts or pecans if needed.
  2. If you don’t plan to use pre-cooked chicken, season chicken breasts with pepper and salt to taste (additional seasonings could include onion and garlic powder). Grill or pan-sear until fully cooked (165°F internal temperature). Let it rest for a few minutes before chopping.
  3. In a large bowl, layer the arugula and spinach as the base. Evenly distribute chopped chicken, cucumbers, mushrooms, egg slices, nuts, shredded cheese, and cherry tomatoes over the greens.
  4. Drizzle with Marzetti Simply Creamy Greek Tzatziki Dressing & Sauce. (or the dressing of your choice.)
  5. Gently toss the salad to coat everything evenly. If desired, garnish with avocado slices and freshly ground black pepper. 
  6. Serve immediately.

Can I make this salad in advance?
