We’re back, sharing our easy meal ideas using Johnsonville products! It’s summer, and for us this means SCHOOL’s OUT!

Summertime meals should mean less work or at least less time spent sweating over a hot oven. Seriously, who likes to cook in the summer time? Just craziness!

So, I ditched the oven (kinda) and pulled out my Johnsonville grill. We love to entertain during the summer months and put new twists on our favorite summer dishes. Enter the classic potato salad, served at most holiday dinners and potlucks. But check out what we did!

For our Mini Potato Salad Bowls, we think we created a pretty nifty and delicious alternative to the traditional potato salad. Our take is (in my opinion) is a lot easier, and we stuffed it with Johnsonville Naturals, fresh salad fixings from our home garden, a squirt of sour cream and my favorite, and most recent discovery, garlic scapes! (Thanks, Joel). Yes, garlic scapes. A garlic scape is the flower bud of a garlic plant, and it is delicious, tastes like garlic but fresher, and not as intense as typical garlic cloves. Good stuff. I also love the versatility of the Mini Potato Salad Bowls. You can pair the brats with just about anything your heart desires. So go ahead and get as creative as you want. Ingredients:

  • Johnsonville Original Brats
  • Three medium Yukon Gold Potatoes
  • 1/2 cup shredded garden salad mix
  • 2 tbsp shaved Parmesan
  • 6 1/2″ garlic scapes
  • 3 tbsp sour cream
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • sea salt or Kosher salt to taste
  • freshly cracked black peppercorns

Directions:

  1. Place Johnsonville Original and Mild Italian Sausage Brats on the Johnsonville Griller and cook. When brats are finished cooking remove them with a pair of tongs, cut them into pieces, set aside.

  2. Wash potatoes and place them into a medium size stock pot, cook potatoes for 15-minutes. Potatoes don’t have to cook until they’re all the way done because you are going to finish cooking in a skillet on the stove top.

  3. Drain partially cooked potatoes and cut them evenly crosswise.
  4. Add a tablespoon of EVOO and a tablespoon of unsalted butter. When the oil is hot, add the potatoes carefully and brown the sides evenly, after browning the bottom of the potato remove them from the skillet.

  5. When the potatoes have cooled, use a paring knife and a teaspoon to create a hole in the center of each potato by scooping out the inside of the potato leaving a 1/4″ width around the edge of each.Mini Potato Salad Bowls-9
  6. Add a pat of sweet cream butter, salt and freshly ground black peppercorns to the bottom and inside of each potato bowl.
  7. Squirt a bit of sour cream into each mini bowl.Mini Potato Salad Bowls-10

  9. Arrange the cut Johnsonville brats pieces next.
  10. Add a bit more sour cream and a cut length of the garlic scapes.Mini Potato Salad Bowls-11

And that’s it!! A simple, yet easy and delicious way to have potato salad! Trust me; our Mini Potato Salad Bowls will be a big HIT at your next BBQ or game day party!
