Ingredients for White Chocolate Peppermint Cheesecake Bites
1 8ozBlock of Cream Cheese; softened to room temperature
5cupsPowdered Sugar
1cupPeppermint Candies
¼tspPeppermint Extract
1cupWhite Chocolate Chips
Instructions
In a food processor, pulse peppermint candies until fine. Set aside.
In a large mixing bowl, or in a stand mixer, whip the cream cheese for about 20-30 seconds. Add peppermint extract and ½ cup of powdered sugar. Mix on low speed. Slowly add powdered sugar ½ cup at a time.
After all of the powdered sugar has been added, gradually turn the speed up until reach med-high. Mix for a minute or two, until everything is well incorporated. You may need to stop a couple of times to scrape the bowl.
Next, add in your pulsed peppermint candies and whip another 30 seconds or so. Add in your white chocolate chips and stir until well distributed.
Put your candy mixture into the refrigerator for an hour or so until it firms up.
With your hands, form small bite-sized balls. Roll and then set on a parchment-lined dish. Continue until you've used all the mixture. Set back into the refrigerator for another 20-30 minutes.
