White Chocolate Peppermint Cheesecake Bites

Ingredients

  • 1 8 oz Block of Cream Cheese; softened to room temperature
  • 5 cups Powdered Sugar
  • 1 cup Peppermint Candies
  • ¼ tsp Peppermint Extract
  • 1 cup White Chocolate Chips

Instructions

  • In a food processor, pulse peppermint candies until fine. Set aside.
  • In a large mixing bowl, or in a stand mixer, whip the cream cheese for about 20-30 seconds. Add peppermint extract and ½ cup of powdered sugar. Mix on low speed. Slowly add powdered sugar ½ cup at a time.
  • After all of the powdered sugar has been added, gradually turn the speed up until reach med-high. Mix for a minute or two, until everything is well incorporated. You may need to stop a couple of times to scrape the bowl.
  • Next, add in your pulsed peppermint candies and whip another 30 seconds or so. Add in your white chocolate chips and stir until well distributed.
  • Put your candy mixture into the refrigerator for an hour or so until it firms up.
  • With your hands, form small bite-sized balls. Roll and then set on a parchment-lined dish. Continue until you've used all the mixture. Set back into the refrigerator for another 20-30 minutes.
  • Serve and Enjoy!
