Caramelized Apple and Onion Grits Crostini

Ingredients

  • 2 teas. Oil
  • 1 medium Onion thinly sliced
  • 2 small Apples cored, sliced
  • ¼ cup uncooked grits
  • 1 ¼ cups water
  • ½ cup AP Flour
  • 2 teas. Sugar
  • 1/8 teas. Salt
  • ½ Cup Milk
  • 2 Tbsp. Butter melted
  • 1 Egg
  • 4 oz. Smoked Gouda shredded
  • Minced Thyme for garnish

  • In a skillet over medium high heat add the Oil and Onion, sauté until the onion is soft and beginning to
  • brown, 5-8 minutes.
  • Add in the Apple slices and reduce to medium heat. Toss frequently until the onions are caramelized
  • and the apples are slightly caramelized, 8-10 minutes. Remove from heat and set aside.
  • In a small sauce pan bring the water to a boil, slowly stir in the Grits reduce heat to a simmer and stir
  • occasionally until thick, 5-8 minutes. Set aside and let cool.
  • Preheat oven to 400˚.
  • In a bowl combine the Flour, Sugar and Salt. Make a well in the middle and add the Milk, Butter and
  • Egg. Whisk to combine. Whisk in the cooled Grits breaking up any lumps.
  • Spray two 12 cup muffin tins with cooking spray. Add 1 tablespoon of batter to each cup. Bake at 400˚
  • until brown and crispy on the edges, 13-15 minutes. Remove to wire rack to cool. Reduce oven to 350˚
  • Place crostinis on a baking sheet, place a small amount of cheese on top of each, followed by a small
  • amount of onion, apple slice and just a little bit more cheese.
  • Bake at 350˚ until the cheese starts to brown, about 8 minutes.
  • Garnish with Thyme and serve hot.
