Instant Pot Meatloaf And Potatoes

Ingredients

  • 1 ½ pounds lean ground beef
  • ¾ cup milk
  • 2 eggs
  • 2 teaspoons garlic salt
  • 1 teaspoon pepper
  • ½ teaspoon oregano
  • 1 small onion- chopped
  • ¾ cup Italian breadcrumbs
  • 1 ½ lbs potatoes of choice- I love using the mini potatoes
  • 1-2 tablespoons olive oil
  • 1 teaspoon garlic salt
  • ½ cup milk
  • Salt and pepper to taste
  • Glaze:
  • 1 cup ketchup
  • ½ cup brown sugar
  • 1 Tablespoon Worcestershire sauce

Instructions

  • Combine the ground beef, milk, eggs, garlic salt, pepper, oregano, onion, and breadcrumbs in a large bowl. Mix all the ingredients well until everything is evenly distributed. 
    Place two sheets of aluminum foil on a flat surface, add the meatloaf mixture in the center of the foil, and gently shape the meat into a loaf shape. 
    Bring the sides of the aluminum foil up around the sides of the meatloaf to create a bowl. 
    Wash your potatoes and cut them up into pieces if you are using larger potatoes. Place in a medium bowl and drizzle with olive oil, and sprinkle with garlic salt. Toss the potatoes until they are covered. 
    Place 1 cup of water into the bottom of the Instant Pot and add the trivet to the bottom.
    Put your potatoes on top of the trivet in an even layer. 
    Carefully place the meat mixture on top of the potatoes and make sure the sides of the foil are still up. 
    Set the Instant Pot on high pressure for 28 minutes and allow a 10-minute natural release. 
    Carefully remove the meatloaf from the Instant Pot and transfer it to a baking sheet. (Be careful it will be very hot) 
    Mix the glaze by adding all ingredients into a small bowl and whisk until combined. Brush the glaze all over the sides and top of the meatloaf. 
    Set your oven on broil and broil the meatloaf for 4-5 minutes until the glaze is bubbly. (Keep a close eye on it because it will burn fast!) Allow the meatloaf to rest for about 10 minutes before cutting into it. 
    Remove the potatoes from the bottom of the pot. You can eat them as is, season with salt and pepper to taste, or you can use a hand mixer and whisk until the potatoes are smooth. Add the milk and salt, and pepper to taste and mix until smooth.
