Peach Sorbet with Mint

Ingredients

  • 4 1/2 cups 6 peaches ripe peaches boiled for 10 minutes, skin removed, pit removed, and chopped
  • 8-10 fresh mint leaves
  • 3/4 cup of sugar
  • 1/4 cup of honey
  • 2 tbsp of fresh lemon juice

Instructions

  • Combine the ingredients and blend until completely smooth. 
    Transfer into an ice cream machine and follow the instructions for making sorbet.
    If you do not own an ice cream maker, pour the contents into a loaf pan. Cover tightly with plastic wrap and ensure the plastic wrap is pressed onto the top of the sorbet mixture; this will prevent ice crystals from forming and freezing for 6-8 hours or overnight.
    Serve.
