Place a wok or large cast iron skillet over medium-high heat, and add a tablespoon of peanut or other neutral, high smoke point oil.
When the oil is hot, add the strips of beef and stir until the beef is browned. This should take a few minutes. Remove the meat, add the fresh and trimmed French green beans, and saute for 2 minutes.
Add two tablespoons of water and adjust the heat to low. Place a tight-fitting lid onto the wok or skillet and allow the green beans to cook for 10 minutes or until the beans are tender but still crisp.
When the green beans have reached the degree of doneness you prefer, reintroduce the steak, and add the onions, shallots, green onions, peppers, and garlic. Adjust the heat to med-high and continue to cook until the veggies are evenly sauteed in about 5 minutes.
Add the soy sauce, fish sauce, oyster sauce, and sesame oil. Toss evenly to coat the ingredients.
Serve warm or hot over rice or lo mein noodles.
