Beef Steak Stir Fry

Ingredients

  • 1 pound North Bay Produce French Green Beans
  • 1 tbsp minced garlic
  • 1 pound skirt or flank steak
  • 1 half large yellow onion, sliced
  • 1 large shallot, sliced thin
  • 3 green onions cut into 1-inch lengths, then quartered
  • 1 medium sweet red bell pepper or three small red peppers
  • 4 cloves of garlic sliced lengthwise
  • 3 tbsps eanut oil or neutral oil with a high smoke point
  • 3 tbsps low-sodium soy sauce
  • 2 tbsps fish sauce
  • 2 tbsps oyster sauce
  • 1 tbsp sesame or toasted sesame oil

Instructions

  • Place a wok or large cast iron skillet over medium-high heat, and add a tablespoon of peanut or other neutral, high smoke point oil.
  • When the oil is hot, add the strips of beef and stir until the beef is browned. This should take a few minutes. Remove the meat, add the fresh and trimmed French green beans, and saute for 2 minutes.
  • Add two tablespoons of water and adjust the heat to low. Place a tight-fitting lid onto the wok or skillet and allow the green beans to cook for 10 minutes or until the beans are tender but still crisp.
  • When the green beans have reached the degree of doneness you prefer, reintroduce the steak, and add the onions, shallots, green onions, peppers, and garlic. Adjust the heat to med-high and continue to cook until the veggies are evenly sauteed in about 5 minutes.
  • Add the soy sauce, fish sauce, oyster sauce, and sesame oil. Toss evenly to coat the ingredients.
  • Serve warm or hot over rice or lo mein noodles.
