Grilled Lime Honey Shrimp & Tomato Salad

- 5 cups mixed salad greens
- 1-2 cups cherubs tomatoes
- 1 1 small red onion thinly sliced
- 1 small cucumber thinly sliced
- 2 cups cooked shrimp with their tails removed
- 6-8 strips of thick-cut bacon *note you can either pan-fry the shrimp or prepare them over a charcoal or gas grill
Build the salad by adding the mixed salad greens to a large salad bowl, add red onions, cucumber, cooked shrimp, and thick-cut bacon, and top the salad with cherubs tomatoes (Sliced vertically or whole).
Divide the salad into salad bowls and drizzle with the Chili Lime Raspberry Vinaigrette.
Serve.
Chili Lime Raspberry Vinaigrette
Ingredients:
- 1/2 cup EVOO
- 1/4 rosé vinegar
- 1 tbsp freshly squeezed lime juice
- 1 tbsp pomegranate molasses, 1 tsp Dijon mustard
- 1/2 cup fresh raspberries, 1/2 cup blackberries, a pinch of sea salt
- pinch of freshly cracked black peppercorns
Directions

- Add the berries to a Mason jar-style glass and mash them thoroughly with a muddler or the back of a fork.
- Add the EVOO, rosé vinegar, freshly squeezed lime juice, pomegranate molasses, dijon mustard, sea salt, and freshly cracked black peppercorns.
