Breakfast Grazing Board

Almost everyone likes breakfast food, so we thought what could be better or more natural than creating a Breakfast Grazing Board filled with a lot of breakfast YUM, like pancakes, waffles, deviled eggs and more! Read on.

“Breakfast is the most important meal of the day,” and with this adage in mind,  we’ve gone and created our Pancake & Waffle Grazing Board. And since we couldn’t decide between pancakes and waffles, we made both; I think we made the right decision. This brunch was a major hit with our boys; they loved it because it gave them lots of familiar options to choose from and a few unexpected goodies as well.

Adding deviled eggs to this breakfast brunch grazing board was a step in the right direction, would you believe I made a dozen of them, but by the time I got the camera set up my boys had grabbed most of them, I guess having hungry teenage boys hovering close by wasn’t a good idea. Talk about a meal idea when it comes to throwing an impromptu brunch because there’s something for everyone, as long as they have a healthy appetite for delicious breakfast food.

We served up maple syrup, apple butter, and a homemade blackberry and honey syrup to go with our hot off of the griddle silver dollar pancakes and mini waffles. You can always make your own syrup as well. 

Pancake Board

Here’s What You’ll Need To Put Together Our Breakfast Grazing Board:

Pancake Mix. For this foodie project, I used a box pancake mix, but I doctored it up to make it homemade-ish-y. I used our favorite pancake mix and followed the instructions for making 6-8 pancakes, then added 1/2 cup of sour cream, and replaced the water with room temperature buttermilk and a pinch of cinnamon. Thick Cut Bacon. There’s nothing like thick-cut bacon, and making it in the oven is how I do bacon. Just preheat the oven to 400 degrees, line a cooking sheet with foil and arrange 10-12 slices of bacon on top. Once the oven is heated, place the cooking sheet on the middle rack and cook for 22-24 minutes or until the bacon is as crispy as you want it to be, remove the bacon and place it on a platter or plate lined with paper towels to absorb any excess grease. 

Deviled Eggs. Place six eggs into a saucepan and cover the eggs with water about a 1/2″ to 1″ over the tops of the eggs, allow the water to come to a boil and continue to cook them for 7 to 12 minutes.  Place the eggs into an ice bath to cool for 5 minutes, then peel. Slice each egg lengthwise and scoop out the eggs yolks into a bowl. Add 1/2 cup of mayonnaise, a tablespoon of yellow or Dijon mustard, a tablespoon of Sriracha, two tablespoons of sweet pickle relish, and sea salt and freshly cracked black peppercorns to taste. Combine the mixture until smooth, then spoon the egg yolks back into the egg whites.

Smoked Salmon. Adding smoked salmon to this brunch raised the fancy pants just a little bit, and if you love salmon, chances are you’ll cotton to smoked salmon just fine. 

Fresh Fruit. Adding fresh fruit is a great way not only to add needed nutrition but also pops of color to your breakfast and brunch grazing board. Add what you and your family like slices of apple, pears, bunches of grapes, and slices of melon. 

Syrups, Apple Butter, Jams, Jellies & Preserves, Oh my! When pancakes and waffles are on the menu, it’s probably a written law that you have to serve pure maple syrup. But rest assured there are other pancake topping options you may want to consider, like yogurt, apple sauce, fresh berries, peanut butter, ricotta cheese, warm skillet apple cinnamon apples. Also, setting out an assortment of jams, jellies, and preserves isn’t a bad idea either.

Homemade Honey Blackberry Syrup

Homemade Honey Blackberry Syrup

Ingredients:

  • 1 cup blackberries
  • 3/4 cup water
  • 1/2 honey

Directions:

  1. Into a saucepan over med/high heat add one cup of fresh blackberries, a three-quarter cup of water, and a half-cup of honey.
  2. Bring the mixture to a boil for one minute and break the berries apart using a potato masher or fork.
  3. Remove the saucepan from heat and cover with a tight-fitting lid.
  4. Allow the syrup to steep for fifteen minutes.
  5. Serve. 
  6. Store any unused syrup in a Mason jar, with the lid screwed tight,  up to two weeks.
