I went to the local fresh grocer (Horrocks)  on the lookout for things I felt would complement the wonderful taste of salmon.

I saw some Michigan Candy Sweet Onions and asked the man stocking them if he had used them before.

He said yes, and they were, if not just as sweet but much sweeter than the Vidalia variety.

After arriving home, I went to our garden and harvested some fresh parsley, kale, and a few zucchini.

The parsley was for the salmon, but the kale and zucchini were set aside for my Jasmine rice.

Baked Salmon, Sweet Candy Onions and Brown Sugar Mandarin Glaze

Here’s what you will need for the baked salmon:

Ingredients:

  • 4 Salmon Filets
  • 3 Tablespoons of Extra Virgin Olive Oil (use one tbsp of EVOO for sauteing onions and garlic)
  • 3-4 Garlic Cloves, chopped
  • 2 Tablespoons of Light Brown Sugar
  • 2 tablespoons of Unsalted Sweet Cream Butter
  • 1 Can of Mandarin Oranges, drained but reserve juice
  • 1 Large Michigan Sweet Candy Onion (or Sweet Vidalia), sliced
  • 1/2 cup Parsley, finely chopped

Seasoning:

  • Old Bay
  • McCormick Peppercorn Medley Grinder
  • McCormick Chipotle Sea Salt Blend

Baked Salmon, Sweet Candy Onions and Brown Sugar Mandarin Glaze

Directions for preparing the salmon:

  1. Pat dry salmon steaks and brush each with a tablespoon of Extra Virgin Olive Oil
  2. Season salmon steaks with Old Bay, Cracked Peppercorn, and Chipotle Sea Salt Blend
  3. Place salmon steaks on a buttered cookie sheet with high-walled sides to prevent juices from spilling.

Directions for glaze:

  1. Add 2 tablespoons of light brown sugar, reserved Mandarin Orange juice, and 1 tablespoon of chopped parsley in a small bowl. Mix well and coat seasoned salmon steaks using a baker’s brush.
  2. Saute the onions and garlic in a skillet with a tbsp of olive oil or melted butter.
  3. Top salmon steaks with Mandarin oranges, and the sauteed chopped garlic, and onions,
  4. Place in a preheated 400-degree oven and bake for (the rule of thumb is to bake salmon for 4 to 6 minutes per 1/2-inch thickness) 20 minutes because I prefer the skin to be crispy and have no sliminess in the salmon meat.
  5. At the 10-minute mark, apply more glaze (using a clean brush)
  6. When finished, remove from oven and apply for glaze and let salmon steaks rest for about 5 minutes, serve.

Instructions

    My salmon wasnt cooke enough. I think that 350 deg is not high enough. Will try 400 deg another time

    You mention sauteeing the onions in the ingredient list but then there are no instructions to saute the onions. So do you saute them or not?
