Blueberry Chia + Oatmeal Waffles

Who doesn’t enjoy waffles? I know I love ’em to the moon and back! But you know what? I adore waffles, even more, when I can sneak a few healthy ingredients in, and our boys are unaware. Call me sneaky if you want to, but we’re talking nutrition here; and the reality is, our kids don’t always make the best nutrition choices, that’s why they’re lucky to have us. No? For this post, we’re doing a bit of healthy cooking on the low, low! I have added, not only blueberries, but chia seeds, oatmeal, and a little bit of Greek yogurt into the mix and the boys ate them up lickety-split and guess what? They even asked for more!

Blueberry Chia + Oatmeal Waffles

And to sweeten the deal, we even added fresh blackberries, slices of sweet banana, and a drizzle of organic maple syrup!

Blueberry Chia + Oatmeal Waffles

A drizzle of warm maple syrup is the perfect finish!

The Best Blueberry Waffles

Blueberry Chia + Oatmeal Waffles

Ingredients:

  • 2 cups Bob’s Red Mill Organic 7 Grain Pancake/Waffle Mix
  • 2 tbsp walnut oil (or an oil of your choice)
  • 1 tbsp chia seeds
  • 2 tbsp quick organic oats
  • 1 1/2 cup buttermilk, room temperature
  • 4 eggs
  • 1/2 stick sweet cream organic butter

Directions:

  1. Preheat the waffle iron and melt butter, grab a small baker’s brush.
  2. In a large bowl add pancake mix, oil, chia seeds, oatmeal, and the buttermilk.  Fold one egg at a time into the batter until all of the eggs are added. Do not over mix, doing so will result in tough waffles.
  3. When the waffle iron is hot brush the top and bottom griddle with melted butter, spoon 3-4 tablespoons of waffle batter into the bottom griddle, add sever blueberries into the batter and close the lid. Cook the waffles until they are golden brown, brush more butter onto the finished waffles. Place finished waffles on a serving platter or plate, place the waffles into an oven set to warm. Repeat the process until all of the waffles are made. Top waffles with banana slices, fresh blackberries, and blueberries. Drizzle with warm maple syrup. Serve.
