Instant Pot Meatloaf And Potatoes

The pot in pot method when using your Instant Pot is a true game-changer for dinners in our house. It all cooks at the same time for easy cleanup! Instant Pot meatloaf and potatoes, cook simultaneously and provide my family with a delicious meatloaf and potato side dish.

Instant Pot Meatloaf And Potatoes

All moms and dads will rejoice when it takes 10 minutes to prep dinner for a wholesome and picky eater meal-approved dish like this pressure cooker meatloaf. I remember when we got our first Instant Pot. I let it sit in a box for several months before using it. Back then, there weren’t many recipes and tips and tricks on how to use it. Now that we’re back into another busy school year, easy recipes are my jam. This instant pot easy recipe is a savory and hearty one. If you’re a fan of the classic meatloaf and potato combination, you’ll love the idea of an easier way to make it without losing any flavor. 

Instant Pot Meatloaf Recipe

Servings: 6 

Prep Time: 10 minutes 

Cook Time: 38 minutes 

Total Time: 48 minutes

How to make meatloaf in the Instant Pot

  • 1 ½ pounds lean ground beef 
  • ¾ cup milk 
  • 2 eggs 
  • 2 teaspoons garlic salt 
  • 1 teaspoon pepper 
  • ½ teaspoon oregano 
  • 1 small onion- chopped 
  • ¾ cup Italian breadcrumbs

 Instant Mashed Potatoes Recipe

  • 1 ½ lbs potatoes of choice- I love using the mini potatoes 
  • 1-2 tablespoons olive oil 
  • 1 teaspoon garlic salt 
  • ½ cup milk 
  • Salt and pepper to taste 

Glaze: 

  • 1 cup ketchup 
  • ½ cup brown sugar 
  • 1 Tablespoon Worcestershire sauce

Directions on making Instant Pot Meatloaf and Potatoes

  1. Combine the ground beef, milk, eggs, garlic salt, pepper, oregano, onion, and breadcrumbs in a large bowl. Mix all the ingredients well until everything is evenly distributed. 
  2. Place two sheets of aluminum foil on a flat surface, add the meatloaf mixture in the center of the foil, and gently shape the meat into a loaf shape. 
  3. Bring the sides of the aluminum foil up around the sides of the meatloaf to create a bowl. 
  4. Wash your potatoes and cut them up into pieces if you are using larger potatoes. Place in a medium bowl and drizzle with olive oil, and sprinkle with garlic salt. Toss the potatoes until they are covered. 
  5. Place 1 cup of water into the bottom of the Instant Pot and add the trivet to the bottom.
  6. Put your potatoes on top of the trivet in an even layer. 
  7. Carefully place the meat mixture on top of the potatoes and make sure the sides of the foil are still up. 
  8. Set the Instant Pot on high pressure for 28 minutes and allow a 10-minute natural release. 
  9. Carefully remove the meatloaf from the Instant Pot and transfer it to a baking sheet. (Be careful it will be very hot) 
  10. Mix the glaze by adding all ingredients into a small bowl and whisk until combined. Brush the glaze all over the sides and top of the meatloaf. 
  11. Set your oven on broil and broil the meatloaf for 4-5 minutes until the glaze is bubbly. (Keep a close eye on it because it will burn fast!) Allow the meatloaf to rest for about 10 minutes before cutting into it. 
  12. Remove the potatoes from the bottom of the pot. You can eat them as is, season with salt and pepper to taste, or you can use a hand mixer and whisk until the potatoes are smooth. Add the milk and salt, and pepper to taste and mix until smooth.

 What Does Pot In Pot Method Mean

Pot in pot means you are cooking two different items at once. For this recipe, we are going to be cooking potatoes for mashed potatoes and then meatloaf. 

You will be stacking the food into the Instant Pot so each item can cook properly. You will see potato and meat combos, and even rice and meats, which are pot in pot methods! 

What Does It Mean To Natural Release? 

Natural releasing pressure on the Instant Pot allows your Instant Pot to sit once the timer is done cooking. It will begin counting on the screen. When it reaches the desired number, you then move the toggle on the lid to release any extra pressure in the Instant Pot. Then safely remove the lid fully. 

Most meat will need to be naturally released, or it becomes very tough and even dry. Allowing a natural release helps to preserve the soft texture of the meat.

Does This Work In A Ninja Foodi 

Do you own a Ninja Foodi? Go right ahead and cook the same way and instead of broiling the meatloaf at the end, swap the lid over to the air fryer to crisp up the glaze that way! It makes it even more straightforward! Same for if you own an Instant Pot Duo Crisp.

Can I Bake In The Oven Instead 

If you want to try this recipe but don’t own an electric pressure cooker, bake the meat loaf in the oven at 350 degrees until fully cooked. Then for the potatoes, you will cook on the stovetop in a pot of water, drain and then mash and mix the potatoes to a creamy texture. 

There is more work and more dishes involved, but this recipe does work in the oven. 

Instant Pot Meatloaf and Potatoes

You can store the meat and potatoes in an airtight container for a few days to use for leftovers. Pair this recipe with green beans as a veggie or a fresh salad and dinner rolls. This tender meatloaf recipe may just become a family favorite! Cooking both recipes together in the instant pot is definitely a game changer for me.

    Just made this tonight in my Ninja Foodi and it turned out perfect! I had tried meatloaf in the Ninja previously but it was never done but I was using the air fryer mode instead of pressure cooking it.
