Keto Lo Mein

Did you know you can enjoy lo mein on a keto diet? Here is a keto lo mein loaded with flavor and will curb any cravings you might be having for pasta. You will use Palmini hearts of palm linguine for the pasta. Top with veggies and some green onions for flavor. 

Keto Lo Mein

This keto lo mein is a great main dish or even side dish. You can whip this up in around 15 minutes. Then ring that dinner bell. It would also be great to toss in some chicken to make it a complete meal.

Ingredients For Lo Mein 

Vegetables. Onion, peppers, broccoli are the main veggies in this dish. It is going to add a lot of nutrients to help fuel your body. 

Sauce. The sauce for this lo mein recipe is homemade. Ginger, garlic, tamari, brown sugar, ginger, white pepper, toasted sesame oil all help flavor the dish. 

Palmini Hearts of Palm Linguine. Here, you can use these hearts of palm to replace a classic pasta, helping to make this a keto-friendly recipe. Otherwise, you would have tons of empty carbs. 

Scallions and Sesame Seeds. Dress up the top of your lo mein with some sliced scallions and sesame seeds. These are optional, but they will add flavor and color to your dish.

What Are Heart Of Palm Linguine Exactly

New to Palmini pasta? It is pasta made from the heart of the palm, which allows for that sturdy texture like pasta. This version has only 3-4 grams of carb per serving compared to 42 to traditional pasta. 

You will taste a difference, but with all the spices and veggies, it helps hide that it is not precisely traditional pasta.  Your local store might carry the pasta. If not, you can shop online and ship it to your home. 

The flavor is reminiscent of an artichoke, which fits perfectly in the lo mein recipe.

How to make Keto Lo Mein

Yields 3 servings
Prep Time: 15 minutes
Cook Time: 5 minutes

  • 1 1/2 tablespoons olive oil
  • 1/2 small yellow onion, thinly sliced
  • 1/4 cup thinly sliced red bell pepper
  • 1/4 cup thinly sliced green bell pepper
  • 1 cup broccoli florets
  • 3 cloves garlic, crushed
  • 2 tablespoons tamari sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon keto brown sugar, lightly packed
  • 1/8 teaspoon dried ginger
  • 1/8 teaspoon ground white pepper
  • 1 (400g) can Palmini hearts of palm linguine, rinsed and drained
  • 1 tablespoon toasted sesame oil
  • 1 scallion, thinly sliced
  • 1/2 teaspoon sesame seeds

Directions

  1. Heat a medium to a large skillet over high heat. Once the pan is very hot, add the oil and turn the heat down to medium. Add the onion, red bell pepper, green bell pepper, and broccoli. Cook until the vegetables are just starting to soften, about 1 to 2 minutes, stirring frequently.
  2. Stir in the garlic, tamari sauce, rice vinegar, keto brown sugar, ginger, and white pepper, and cook for 30 seconds, stirring constantly.
  3. Add the Palmini linguine and cook for 2 minutes, stirring frequently. Remove from the heat.
  4. Top with the toasted sesame oil, scallion, and sesame seeds.
  5. Serve.

What noodles are Keto-friendly?

If you don’t have Palmini, here are other options for you to consider. Shirataki Ramen, spaghetti squash, zucchini noodles, or even kelp noodles can be used for a replacement of pasta noodles.

Can I Make this recipe Paleo? 

With a few simple adjustments, you can instantly make this a paleo lo mein recipe. Just swap the sweetener with coconut sugar. Then use coconut aminos to replace the tamari sauce. These two simple swaps are all you need to make this a paleo-friendly recipe. 

 In around just 20 minutes, you have a veggie-loaded dish to serve up.
