Mexican Style Meatball Sandwich

Yes, the colder temperatures are here to stay for a while and in the coming months I gather there is going to be lots friends and family gathered around the dinner table. This time of year is perfect for soups and sandwiches. Although the soup is nice, it is the sandwich that is the star of the show. And if there is comfort in a hot bowl of soup, then there’s double the comfort in the perfect sandwich. I like a good meatball sandwich, but using the same recipe gets old. To make dinner time exciting again was the inspiration behind our Mexican Style Meatball Sandwich. This updated version of the classic meatball sandwich has several ingredients you would expect in a taco rather than in a meatball.

Here’s how we did it. If you’re going to go around calling something a meatball, well yeah you need some ground beef. You will also find kidney beans, red onion, salsa, taco seasoning and a heaping cup and a half of Kraft Mild Cheddar. If you’re having any doubts about whether or not this is a good idea, let me assure you, they were muy delicioso! Our boys tackled them, and they were devoured in a short order. This is the ideal food workout for those weekend football games. And while we’re at it, you may want to remember this one for a quick pre- or post-holiday meal. Your family will thank you for giving them something delicious and different.  Below you will find all of the ingredients to make your very own Grande albóndiga emparedado. Sorry, I mean you’re very own Mexican Style Meatball Sandwich.

Mexican Style Meatball Sandwich

Ingredients:

  • 5 pounds ground beef
  • 1 1/2 cup Kraft Mild Cheddar
  • 1 large red onion, sliced
  • 1 1/2 cup chunky style salsa
  • 1 cup kidney beans
  • 1 package of taco seasoning
  • kosher or sea salt, to taste
  • cracked black pepper, to taste
  • 2 tbsp of olive oil
  • 4 tbsp of melted unsalted butter

Mexican Style Meatball Sandwich

Additional Ingredients:

  • 4 French or Italian style baguettes, split and toasted
  • 1/2 cup romaine lettuce, shredded
  • roasted pepper, optional
  • cilantro, chopped

Mexican Style Meatball Sandwich

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, add ground beef, Kraft Mild Cheddar, salsa, kidney beans and taco seasoning. Mix well with your fingers.
  3. Place a large ice cream scoop amount of the meatball mixture into the palm of your hand and form into a meatball. Make 12 to 15 meatballs, set aside.
  4. In a large skillet add olive oil over medium heat, when oil is hot add 5 to 6 meatballs, brown meatballs evenly using a wooden spoon to turn. Continue until all meatballs are browned.
  5. Drain off excess grease from pan, add meatballs and bake in a 350-degree oven for 15 to 20 minutes. When done remove from oven and place meatballs aside.
  6. Prepare baguettes by cutting them down the middle but not all of the way through, brush inside with melted butter, place face down in a clean skillet and toast.  Repeat until all baguettes toasted.
  7. Make sandwiches using Mexican Style Meatballs, shredded romaine, sliced red onion, salsa and Kraft Mild Cheddar Cheese.
  8. Serve. {And be sure to add your soup of choice!!}

And that, is how it’s done my friends!

I stopped by local Walmart to pick up all of the necessary ingredients. I like to buy the bigger bags of cheese, versus buying a ton of smaller bags. Twice the size, less fuss. Walmart makes it easy to have everything under one roof, I was in and out in no time! Not only do I like to make quick and easy meals, but I like to save time shopping at one store for all of the items on my list.

      I don’t know what it is with me, but I hate meatball subs/sandwiches but I will eat up meatball by themselves. My boyfriend however, loves meatball subs. I should surprise him and make these!
