Where are all of my juicers at? I am amping up my juice game with my Super Beet Energy Juice made with lots of fresh and mega-nutrient dense ingredients. This incredible juice starts with one whole large red beetroot washed and quartered. We all know that superfood beets are fantastic, and packed with a cadre of super-healthy nutrients, including folate, betaine, magnesium, potassium, folate, Vitamin C, and an impressive dose of nitrates. Yes, nothing beats beets! Sorry, I couldn’t resist.

For this juice recipe, it all starts with one large beetroot washed and then quartered.

Next, I added a two-inch length of ginger root, quartered a whole Granny Smith apple, and the juice of one fresh squeezed lemon.

I also tossed in two cups of fresh collard; these are another superfood packed with lots of calcium, vitamin A, vitamin C, and a good source of vitamin K, iron, vitamin B-6, and lots of magnesium.

This recipe makes over 2 1/2 cups of juice, that’s a lot a good and a whole lot of good stuff too! I also freeze leftover juice into ice cubes, which make a great addition for smoothies.

  • 1 beet
  • 1 broccoli head
  • 1 green apple
  • 1 lemon
  • 2 cups collard greens
  • 2″ round of ginger root 

NOTE: juice the lemon using a hand-pressed juicer

Directions for Super Beet Energy Juice

  1. Toss quartered beet, broccoli, apple, collard greens, and ginger into a juicer and make it rain baby!
  2. Add the freshly squeezed lemon to your serving glass.
