Waffle and Pancake Berry Breakfast

Have you ever experienced having a hard time deciding whether you wanted pancakes or waffles?

I’ve been there, and it’s so unfair to my taste buds. But I solved the problem of having to decide because our Waffle and Pancake Berry Breakfast features both pancakes and waffles.

For this recipe, I made both homemade cornmeal pancakes and lemon buttermilk waffles.

I topped them with homemade bourbon, spice whipped cream, and lots of fresh fruit like strawberries, blueberries, bananas, dark cherries, and wild raspberries.

I mean, what could be better?

I also add a hardboiled egg, as well as fresh mint, lemon thyme, and lavender, all from our family garden.

But if you thought this was a great recipe idea, hold your horses because I also added bourbon barrel-aged maple syrup and a dusting of powdered sugar.

Sorry. Not sorry.

Waffle and Pancake Berry Breakfast

What You Will Need To Make Our Waffle and Pancake Berry Breakfast:

Pancakes + Waffles. I made two distinct recipes for the pancake and waffle batters: Greek Yogurt + Lemon Waffles and Buttermilk Cornmeal Pancakes. Or you can use either one of these yummy recipes to make both the pancakes as well as the waffles. You have options. 

Fresh Fruit. Just by looking at the photos, you can tell I used ALL the fruit! And you can, too! I used fresh strawberries, blueberries, bananas, dark cherries, and wild raspberries from our backyard. Hit up your local farmer’s market to see what’s in season in your neck of the woods. 

Hardboiled Egg. I thought adding a ten-minute hardboiled egg was a nice touch because not only does it look great, but it also adds additional nutrition. Don’t do eggs; that’s okay. Add panfried cheeses like halloumi, paneer, or queso Blanco. If dairy isn’t your bag, fried tofu will do the job.

Maple Syrup. For this recipe, I used bourbon barrel maple syrup, but feel free to use regular maple syrup or your favorite table syrup as well; whatever blows your hair back, that’s what you need to use to sweeten the deal. Oh, honey or guava is a couple of great options as well.

Greek Yogurt + Lemon Waffle Recipe

8 Servings

  • 2 cups all-purpose leveled off
  • 2 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Kosher salt
  • 5 tablespoons melted unsalted butter
  • 1 cup milk
  • 1/2 cup Greek yogurt
  • zest of 1 lemon
  • 2 tablespoons freshly squeezed lemon juice
  • 3 eggs
  • 1 tablespoon pure vanilla extract 

Directions:

  1. In a medium-sized bowl, combine the dry ingredients: all-purpose flour, sugar, baking powder, baking soda, and Kosher salt, and mix well.
  2. In a separate bowl, add the wet ingredients: melted unsalted butter, milk, Greek yogurt, zest of one lemon, lemon juice, eggs, and pure vanilla extract, and mix well. 
  3. Gently fold the wet ingredients into the dry ingredients until all the ingredients are combined; be careful not to overmix. 
  4. Set the waffle batter aside and allow it to air; pockets begin to appear on the surface of the batter in about 10 minutes or so. 
  5. Preheat the waffle iron and brush with additional melted butter or spray with a cooking spray like coconut, canola, or vegetable oil spray.
  6. Spoon roughly 1/2 cup of waffle batter into each waffle compartment and close the lid. Cook until the waffles are golden brown and crispy along the edge. 
  7. Plate and brush with additional melted butter.
  8. Serve. 

Waffle and Pancake Berry BreakfastButtermilk Cornmeal Pancakes Recipe

Ingredients:

  • 2 1/2 cups all-purpose
  • 2 tablespoons cornmeal
  • 3 1/2 tablespoons granulated sugar
  • 1 3/4 teaspoons baking soda
  • 1 3/4 teaspoons baking powder
  • 1 1/4 teaspoons sea salt or Kosher salt
  • 2 3/4 cups buttermilk (room temperature)
  • 2 eggs + 1 egg yolk
  • 1 1/2 tablespoons pure vanilla extract
  • 5 tablespoons unsalted butter (melted)

Directions:

  1. In a large bowl, combine all of the dry ingredients: add the all-purpose flour, cornmeal, sugar, baking soda, baking powder, and sea salt, and mix well.
  2. Using a separate bowl, add two whole eggs and one egg yolk and beat well. 
  3. Add the buttermilk, melted butter, and pure vanilla extract to the eggs and continue to mix well. 
  4. Little by little, add the wet ingredients to the dry ingredients and mix until the mixture is just combined. Overbeating will result in tough pancakes, and who wants that?
  5. Cover the pancake batter with a large dish towel and let it sit for 10 minutes.
  6. Place a large cast-iron skillet over low-medium heat, add two tablespoons of melted butter, or use canola or vegetable oil.
  7. When the skillet is hot, add two and a half (2 1/2) tablespoons of pancake batter and use a spoon to spread the batter into a circle.
  8. Watch the pancake closely. When small air bubbles start to appear on the surface, flip the pancake over and cook until golden brown. 
  9. When finished, add a bit of melted butter and store pancakes in a warm oven until they’re all done.
  10. Add your favorite toppings, like yogurt, fruit, traditional maple syrup, or bourbon barrel-aged maple syrup. 
  11. Serve and enjoy.

Cardamom + Bourbon Whiskey Whipped Cream Recipe

Ingredients:

  • 2 1/2 cups heavy cream
  • 3 tablespoons sugar
  • 1 tablespoon pure vanilla extract
  • 1 tablespoon bourbon whiskey
  • 1 teaspoon ground cardamom

Directions:

Sidebar: Place the bowl of your stand mixer in the freezer for twenty minutes.

  1. Place the chilled bowl onto the stand mixer, add the heavy whipping cream, and whisk on medium-high until the heavy cream begins to thicken.
  2. Add the sugar and continue to whisk until a stiff peak begins to form. Add the pure vanilla extract and ground cardamom and whisk for thirty seconds.
  3. Last, add the bourbon whiskey and mix gently until it is thoroughly combined.
  4. Chill the whipped cream until ready to serve.
  5. Serve.

Putting the waffle and pancake plate together

To assemble, place a pancake onto a serving plate and overlap it with a waffle.

Add a large scoop of the homemade Cardamom + Bourbon Whiskey Whipped Cream, and top with fresh fruit.

Along the edges of the pancake and waffle, drizzle as much of the bourbon barrel maple syrup as you like, dust with powdered sugar, and garnish with small leaves of fresh mint and sprigs of lemon thyme.

Add half of the hardboiled egg and serve.

Instructions
