Grilled Bratwurst Boil + Herb Pasta

Ingredients

  • Ingredients:
  • 1 package Johnsonville Limited Edition Bratwurst {Firecracker + Jalapeno Cheddar}
  • 1 large green bell pepper cut into 1-inch pieces
  • 1 large sweet red bell pepper cut into 1-inch pieces
  • 1 large Spanish or red onion cut into 1-inch wedges
  • 1 large green zucchini cut into thin rounds
  • 2 sweet corn cobs cut into 2 1/2-inch pieces
  • 2 tablespoons extra virgin olive oil
  • 3 cups rotini pasta
  • 1 large sheet of foil

Instructions

Directions:

  • Prepare charcoal grill ahead of time. I use 3/4 filled chimney of charcoal.
  • Once the coals are hot, brush the sheet of foil with olive oil, set aside
  • Cut the bratwurst into chunks, and set aside.
  • Into a large bowl add the sweet corn, green and red bell peppers, red onions, and zucchini and toss with extra virgin olive oil, sea salt and freshly ground black peppercorns. Add the bratwurst chunks. Transfer the mixture onto the prepared foil. Fold the side up over the mixture and place foil package about eight (8) away from the charcoal. Close the lid and cook for minutes or until the bratwurst is cooked through.
  • While the Grilled Bratwurst Boil is cooking prepare the Rotini pasta according to the package directions. Drain pasta when finished and place into a bowl. Toss the pasta with the Herb Pesto until the pasta is evenly coated. When the Grilled Bratwurst Boil is finished open each foil package and spoon pasta over the mixture. Serve.
