Ingredients

  • 1 pound of North Bay French green beans
  • 1 stick of quality unsalted butter
  • 6-8 large cloves of garlic minced
  • 2-3 tbsp honey you can also use pure maple or agave syrup
  • 2 tbsp dry white wine
  • the juice of 1 lemon
  • 2 tablespoons of EVOO
  • a pinch of kosher salt for blanching the water
  • sea salt and freshly cracked black peppercorns to taste

Instructions

  • Remove the green beans from the package and rinse. Cut the stem ends off the green beans.
  • Fill a large pot with water, add a pinch of kosher salt, and bring to a boil. Blanch the green beans for 3-4 minutes.
  • Transfer the green beans using a slotted spoon into a large bowl filled with iced water. Thoroughly cool the green beans, drain them, and place them in a bowl.
  • Set the bowl with the green bean aside while making the sauce.
  • To make the honey garlic butter sauce, place a large skillet over medium heat, melt 1 stick of unsalted butter, then add minced garlic and the juice of 1 lemon, stirring consistently for 3-4 minutes.
  • Add the white wine and honey, and continue stirring for 2 minutes.
  • Add sea salt and freshly cracked black peppercorns to taste.
  • In a separate skillet over medium-high heat, add 2 tablespoons of EVOO. When the oil is hot, add the cooked French Green Beans and heat through (about 2-3 minutes).
  • Transfer the beans to a serving bowl and spoon the honey-garlic butter sauce over them.
  • Serve.
