Mint Chocolate Chip Eggnog Punch
This Mint Chocolate Chip Eggnog Punch is a festive holiday drink made with creamy eggnog, mint chocolate chip ice cream, rum, ginger beer, and peppermint syrup, perfect for Christmas parties and cozy winter entertaining.

- 1 quart and a half of mint chocolate chip ice cream We love Hudsonville's brand of real, creamy ice cream!
- 1 quart chilled eggnog I recommend Southern Comfort Vanilla Spice Eggnog
- 1 cup Blanco or mojito rum
- 2 1/2 cups chilled ginger beer
- 3 tablespoons peppermint syrup
- additional mint chocolate chip ice cream for garnish
- candy canes for garnish
Into a blender, add the mint chocolate chip ice cream, chilled eggnog, rum, and peppermint syrup.
Pulse into the mixture is smooth, and the consistency is that of a milkshake. Blend until smooth and creamy.
Pour into a punch bowl or pitcher. Then gently stir in the chilled ginger beer.
When you're ready to serve, ladle or pour into each glass, then top with a scoop of ice cream.
Garnish with a candy cane.
Serve immediately.
