Raspberry Piña Colada Cocktail

- 1 1/2 ounces white rum
- 1 ounce gourmet raspberry syrup
- 50 ml RumChata
- 3 fresh raspberries
- 3 ounces pina colada cocktail mix
Add three fresh raspberries into a cocktail tin and mash them with a muddler.
Pour in the white rum, gourmet raspberry syrup, RumChata, and pina colada mix.
Toss in four ice cubes, secure the lid, and shake vigorously for 30 seconds.
Strain through a fine-mesh sieve into a serving glass.
Garnish with a heart marshmallow threaded through a cocktail stick.
Serve.
Homemade Raspberry Piña Colada Mix
About 2 ½ cups of mix
Ingredients:
- 3 ounces of cream of coconut
- 3 ounces of raspberry juice (or frozen raspberries will work- 1/2 to 3/4 cup frozen raspberries and 1–2 tablespoons of water or pineapple juice to help with blending)
- 4 ounces of pineapple juice
- 1 ounce of fresh lime juice
- Put all the ingredients into a blender and whip until you get a smooth consistency.
Store: Transfer to a jar and refrigerate. Shake before using, as separation is natural.
