So let’s talk about this recipe from FarmToFork. They have quite a few recipes on their site, and after browsing around, the Fresh Tomato Bruschetta Chicken was calling my name. It’s a simple recipe, made in about 30-minutes, and it’s so good.  After the first bite, Derrick and I looked at each other and knew we had a keeper on our hands. This is a recipe we are adding to our family’s ever-expanding roster of favorite foods to eat. And our teenage boys loved it! Clean plate club!

We served our Bruschetta Chicken Bake over Jasmine rice made in the Instant Pot, but pairing this recipe with pasta is a good choice too.

Fresh Tomato Bruschetta Chicken Recipe   

Packed With Flavor

Here is a recipe packed with tons of savory flavor and fresh ingredients made with tender marinated chicken breasts, garlic, sautéed onions, fresh basil, and both vine and multi-colored mini heirloom tomatoes. Once out of the oven, this delicious dish is topped with more fresh basil and handfuls of Parmigiano-Reggiano. This recipe looks just as good as it tastes. 

Fresh Tomato Bruschetta Chicken Recipe

The thinly sliced chicken breasts are marinated in a mixture of EVOO, garlic, basil, flaky sea salt, and black peppercorns.

Fresh Tomato Bruschetta Chicken Recipe

Perfectly ripened vine tomatoes complement and elevated this recipe and took it to the next level; our boys ate it up!

Directions on making a Bruschetta Chicken Bake

Yield: 6 Servings

Prep Time: 15 minutes

Cooking Time: 30 minutes

Ingredients:

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons finely chopped fresh basil, plus more for garnishing
  • 1/2 teaspoon freshly cracked black peppercorns
  • 3 large garlic cloves finely minced
  • 1 teaspoon kosher salt 
  • 1/2 teaspoon Italian seasoning mix or dried oregano 
  • 6 thinly sliced boneless and skinless chicken breasts
  • 1 large sweet onion thinly sliced
  • 1 jar (24 ounces) FarmToFork™ Tomato Basil Sauce
  • 2 stems vine tomatoes
  • 1 1/2 – 2 cups tri-colored mini tomatoes
  • 2 tablespoons balsamic glaze
  • 1 cup freshly grated Parmigiano-Reggiano cheese

Fresh Tomato Bruschetta Chicken Recipe

Directions:

  1. Preheat oven to 400 degrees. 
  2. Combine the first six ingredients (extra virgin olive oil, finely chopped fresh basil, minced garlic cloves, kosher salt, freshly cracked black peppercorns, and Italian seasoning mix or dried oregano) into a small bowl and whisk thoroughly. 
  3. Rinse and pat dry six (6) thinly sliced chicken breasts and place them into a resealable plastic bag, add two (2) tablespoons of the olive oil and seasoning mixture into the bag containing the chicken. Set aside for ten (10) and allow the chicken to marinate. 
  4. Place a medium skill over medium heat and add two tablespoons extra virgin olive oil.
  5. Once the oil is hot, add the sliced onions and sauté until the onion and browned and begin to crisp.
  6. Next, add a jar of (24 ounces) FarmToFork™ Tomato Basil Sauce, and continue to cook for five (5) minutes.
  7. Pour the onion and tomato sauce mixture into a greased 13″x9″ high-walled baking dish. Place the marinated chicken breasts into the sauce, overlapping if necessary, add the halved mini tomatoes, vine tomatoes, and a 1/2 cup of grated Parmigiano-Reggiano cheese.
  8. Place the dish onto the middles rack of the 400 degrees preheated oven and bake uncovered for 25 minutes or until the chicken is done (165 degrees), and the vine tomatoes begin to burst. 
  9. Remove the Fresh Tomato Bruschetta Chicken from the oven and scatter with the remaining grated cheese and fresh basil, drizzle with balsamic glaze. 
  10. Serve over rice, pasta, couscous, quinoa, or cauliflower rice.

Ingredients
 

  • 1/3 cup extra virgin olive oil

    I generally prefer to make our own sauce from tomatoes from our garden BUT if we can’t make our own, this sauce sounds like the next best thing 😉

    I have not tried this sauce yet however I do believe I will and work this recipe. I like that there’s no added sugar and not made with tomato paste. Now that I’m in my 50’s I’ve finally decided to pay attention to things like added sugar etc and we’re avoiding thenas much as possible.

    That definitely looks good. Maybe when my semester is over?? Right now, im in a committed relationship with my crockpot?. 8 have been onown though to marry sauce and italian sausage in the pot to bree together for dinner. Also chicken parmesan for another easy tomato sauce idea.

    Definitely going to grab a jar, or two!, of the caramelized onion and roasted garlic when I see it on sale. Not a fan of the recipe as I don’t like tomatoes, though it looks fantastic in the pictures, but I am going to check out their website and find something my family will love. I don’t have a lot of time to spend on meals so anything that is good for my family without the extra junk is worth a try!

    I have quite a few of those ingredients on hand, espeically vine tomatoes. I rescued the last of our heefsteak and cherry tomatoes before the frost hit, I would probably use pasta to make this dish, as that is what my family would prefer. The pictures you used look really appetizing and tempting! One thing I was curious about, was when you said about the lack of tomato paste in the sauce. I don’t see why its seen as a good thing. I use tomato paste all the time when making italian and other dishes, like a goulosh recipe that was handded down to me by my mother in law. I like the flavor it gives to recipes. Just an observation, but I would have to try this new sauce and see if the lack of paste is noticable.
