This flavorful Collard Coleslaw Recipe combines shredded cabbage, raw collard greens, red onion, and a tangy Champagne vinegar mayo dressing—perfect for summer cookouts and easy meal prep.

We also used a store-bought coleslaw mix, saving us time in the kitchen and money on ingredients.

Collard Coleslaw Recipe

Summer is almost here, which means warm weather and summer gatherings. 

Memorial Day Weekend is right around the corner, and it usually kicks off summer gatherings, cookouts, family reunions, and more! 

Coleslaw is a quick recipe for a summer menu because of its fresh ingredients and sweet, tangy flavor. It also pairs well with ribs, pulled pork, corn, and other summer food favorites!

We recently had friends over for a weekend brunch, and we served this collard coleslaw recipe over Del Real Food’s pupusas!

It’s not every day that coleslaw is served at breakfast or brunch, but it went perfectly well with birria and cheese pupusas, so give it a try. 

Benefits of Using A Store-Bought Mix:

You can get away with using store-bought coleslaw for several good reasons. We often purchase store-bought items and doctor them up, which saves us time and ingredients.

A few additional benefits:

It’s easy to customize. Bagged coleslaw is a great base, allowing you to add your favorite mix-ins, like chopped collard greens, as we did in this recipe. We also added celery seeds, sea salt, and black peppercorns.

Save time. There is no need to shred cabbage or carrots; open the bag and pour the mix into a bowl. This saves you time and money. A store-bought option is great when you need something quick or for last-minute gatherings.

Using bagged slaw will also reduce waste. Instead of buying whole heads of cabbage and carrots, you will have just the right amount.

For this recipe, we used Trader Joe’s store-bought mix, which is washed and ready to use, making it easier to prep this recipe. If you do not have a Trader Joe’s near you, you should be able to find coleslaw mixes at your local grocery store.

How To Make Collard & Coleslaw Recipe

6-8 Servings

Ingredients:

  • 1 package (9-ounce) Shredded Cabbage & Red Cabbage w/Orange Carrot Mix *(we use a Trader Joe’s mix) 
  • 2 cups chopped collard greens
  • 1/3 cup chopped red onion
  • 2 tbsps Champagne vinegar with citrus *we recommend the Brightland brand
  • 3/4 tsp celery seed
  • 1 3/4 cup mayonnaise 
  • 2 tablespoons superfine or granulated sugar
  • 1 tsp sea salt
  • pinch of freshly cracked black peppercorns

Directions:

  1. In a large mixing bowl, combine 1 (9-ounce) bag of shredded cabbage & red cabbage with orange carrot mix, 2 cups of chopped collard greens, 1/3 cup chopped red onion, 2 tablespoons of Champagne vinegar with citrus, 3/4 teaspoon of celery seed, 1 3/4 cups of mayonnaise, 2 tablespoons of superfine or granulated sugar, 1 teaspoon of sea salt, and a pinch of freshly cracked black peppercorns.
  2. Mix well.
  3. Taste and adjust seasoning.
  4. Store in the fridge until ready to serve.

Can I Make My Mix instead of Bagged Coleslaw?

You can mix green cabbage, red cabbage, and carrots from scratch.

You will want to come up with about 9 ounces total.

Do I Have To Cook The Collard Greens?

No, you will want to add raw collard greens for texture and freshness.

Chop the collard greens finely so they blend well in the slaw mix.

What If I Don’t Have Champagne Vinegar?

You can use white wine vinegar or apple cider vinegar.

If you use one of those, add a splash of citrus juice (like lemon or orange) to mimic the bright citrus flavor.

Can I Use Less Mayo for a Lighter Version?

Yes, you can start with 1 to 1¼ cups and add more only if needed.

Can I Make This Collard Coleslaw Recipe Ahead of Time?

Yes, you can make this coleslaw a day in advance.

Making this coleslaw the day before will also give this dish’s flavors time to marinate.

However, we don’t recommend making it too far in advance to avoid sogginess with the cabbage.

Can I Store Leftovers?

Store the leftover coleslaw in an airtight container and place it in the fridge.

It will last for up to 2-3 days. Be sure to stir the slaw before serving.

What’s great about this recipe is that it is easy to make, totally customizable, and great for a summer cookout or an easy dinner-night side dish.
