Ingredients You Will Need To Make This Cranberry Cake Dessert

Reddi-wip® Zero Sugar whipped topping. Creamy, delicious, and the perfect fluffy texture for this cranberry truffle. 

Duncan Hines Keto-Friendly Yellow Cake Mix. So I went with a yellow cake, but you are welcome to buy any favorite flavor. I found the yellowcake paired with the cranberries in terms of taste and color, and the combination worked well together. 

Cranberries. Fresh or frozen work for this recipe. I like using fresh when available at the store. 

Sugar-Free Sweetener. You will want to use a sweetener. Feel free to use what you have on hand or your preferred flavor texture.

How to Know Cranberries Are Good

Fresh cranberries will have a nice shine and plump texture to them. You want to toss out any discolored cranberries or ones that are soft or feel mushy. 

Just remember, fresh cranberries offer a sour taste when raw, so cooking them down will help break the berries down, and the sweetener will add the perfect sweetness to them.

How to make a Poke Cranberry Cake Trifle

Ingredients:

  • 1 can Reddi-wip® Zero Sugar whipped topping
  • 1 box Duncan Hines Keto-Friendly Classic Yellow Cake Mix
  • 1 cup whole cranberries
  • 1 ½ cups water
  • 2 ½ tbsp sugar-free sweetener

Directions:

  1. Prepare Duncan Hines Keto-Friendly Classic Yellow Cake Mix according to the package directions. Bake the cake and allow it to cool completely before handling.
  2. Place a saucepan over med-high heat and add cranberries, water, and sugar-free sweetener. Bring the mixture to a boil and break apart 3/4 of cranberries to release their juices; leave some of the cranberries whole for the topping. 
  3. Boil for 5-8 minutes and remove the saucepan from heat. 
  4. Poke holes into the cake and drizzle some cranberry sauce into each hole.
  5. Crumble the cooled cake and set it aside.
  6. Spoon 2 tbsps of the cranberry crumble mixture into the bottom of each serving glass.
  7. Fill the bottom portion of each glass with crumbled cake and top with the Reddi-wip® Zero Sugar whipped topping, add more of the crumbled cake, and top with more Reddi-wip® Zero Sugar.
  8. Drizzle a tablespoon of the cranberry syrup on top and add a single whole cooked cranberry on top.
  9. Serve.

Where to Find Reddi-wip® Zero Sugar whipped topping

Head to your dairy section of the store, and you should be able to find your Reddi-wip by the other whipped cream topping options. I found ours by the buttermilk, heavy cream, etc., section of the store.

How to Know Cake Is Done? 

You will take a toothpick and stick it in the center of the cake. The yellowcake is fully done when the toothpick comes out clean of wet batter. Another thing to watch is the cake will begin to pull away from the sides, and the top can become slightly golden.

Storing Cake Trifle 

So if you do not eat all your dessert, no worries, store it all in the fridge. If you can, don’t assemble the trifles till right before serving. That way, the cake doesn’t become too soggy. Then make single-serve cranberry cake trifles when you’re ready to eat them. 

You can eat the leftovers cold or warm up the cake and cranberry separately for a warm fresh out of oven flavor.

Ingredients
