A refreshing and creamy strawberry popsicle dessert is perfect for summer. 3 ingredients is all it takes to make this strawberry coconut milk crumble popsicle. The crumble adds a nice crunch and sweetness to the popsicles.

Strawberry Coconut Milk Crumble Popsicles

We’re into the thick of summer, with August weather typically bringing humid and hot days. If you need something to cool down besides ice cream, this frozen treat should be on your summer bucket list. If you are a fan of strawberries, this is a great way to use your fresh berries. Or reach for frozen strawberries, as it works just as well in this homemade popsicle recipe. 

You will need the following equipment to make these homemade popsicles:

  • popsicle molds [these are affiliate links ] 
  • wooden popsicle sticks

What Do I Need To Make These Strawberry Coconut Popsicles 

Strawberries. Fresh berries or frozen work. Just make sure you have ripe, flavorful berries, as they will be a big stand-out flavor. 

Coconut Milk. Whole fat coconut milk is best, as it will amplify the richness of the bars. 

Stevia. So I used stevia to sweeten the popsicles. If you do not want to use a sweetener, you can use honey, maple syrup, or even agave. 

Vegan Biscuits. I used vegan biscuits to crumble and sprinkle on the bottom part of the popsicles. This is optional, and you can skip it if you want. If you are not vegan, you can use any cookie, graham cracker, etc., to crumble on the popsicles.

Ingredients need for these homemade popsicles

  • 1 can of full-fat coconut milk
  • 1.5 cup of fresh strawberries
  • 3 tablespoons of Stevia

Prep time: 15 minutes

Serves 10 people

Freeze time: 4-5 hours

Directions on how to make Strawberry Coconut Milk Crumble Popsicles

  1. To prepare these refreshing strawberry & coconut crumble popsicles, start by washing the strawberries and removing their stem.
  2. Once removed, add the place strawberries into the bowl of a food processor with one tablespoon of Stevia, blend all together until you rich a smooth purée. Let the strawberry purée aside.
  3. Open a can of coconut milk and pour it into a bowl; add two tablespoons of Stevia and stir to combine.
  4. Take the popsicles mold, pour two tablespoons of the Strawberry purée into the mold, then add two tablespoons of coconut milk.
  5. Repeat this process of strawberry layer by adding two tablespoons of strawberry puree and two tablespoons of coconut milk until the molds are almost complete.
  6. At this time, add the wooden popsicle stick.
  7. As the last pass, take some vegan biscuits or cookies and make some crumbles.
  8. Add the crumbles at the top of the mold. Put the popsicles mold into the freezer for about 4-5 hours or until the popsicles are completely frozen.
  9. Demold the popsicles by running warm tap water over the outside of the mold for about 20s. Gently pull the popsicle sticks out, and your Strawberry and coconut popsicles are ready to serve. Enjoy.

What if I don’t own a food processor? 

If you don’t own a food processor, you can use a blender as well. Or reach for a potato masher and break up the berries by hand. It will take more time to do, but you will find you can puree the strawberries all the same. 

You do not have to have special equipment to make these bars.

How to make without popsicle molds? 

Using small paper cups, pour your popsicle mixture into the cups, and then place aluminum foil on top of each lid. Then poke a popsicle stick in the center, and the aluminum foil will hold the sticks in place. 

This is a quick way to make homemade popsicles without molds. Then you will peel away the paper cups once frozen and serve up these berry popsicles.

Variations to this strawberry popsicle recipe

  • Add in other berries – raspberries, blackberries, etc. 
  • Swap the strawberries with peaches, kiwi, or any other fruit. 
  • You could add in some chocolate chips for a nice crunch of sweetness 
  • Leave the crumbles off the popsicles if you want.

Can I make these strawberry coconut popsicles in advance? 

Go right ahead and make these a few days in advance if you want. I always recommend making popsicles a day in advance, as it takes time for the popsicles to set up. 

So, feel free to make these up to three days in advance. Then serve and enjoy! Just store the popsicles in the molds and cover them, so they don’t develop ice crystals. 

STORAGE :

You can keep the popsicles in the freezer for a couple of weeks.
