French Dip Sliders

Our French Dip Sliders are what game day food dreams are made of—imagine thinly sliced roast beef piled high on a toasted bun slathered with sour cream and horseradish sauce.

Two kinds of ooey gooey cheese, we are using Swiss and Provolone, but Fontina and Mozzarella are good choices too!

I toasted the buns with black pepper butter and even added grilled onions because they are delicious.

French Dip Sliders for Game Day

Gameday food is different because it is mostly snack food but elevated and hopefully served in more significant portions.

I love sliders because they are a cross between adult-sized finger food and the main course, and if you are lucky, they are the main course, especially if they are as good as our Game Day Roast Beef Sliders.

What You Will Need To Make Our French Dip Sliders

Roast Beef. I ordered a pound of thinly sliced roast beef from my local butcher. If you got beef with roast beef, no worries, thinly sliced turkey or chicken breast works as well. Good pastrami also works incredibly well for this recipe. Think sliced venison roast or a smoked duck breast if you want to take it to another level.

Onions. There is nothing like grilled onions. In my opinion, adding onions to almost any sandwich is an easy way to elevate the flavor. Grilled green bell and sweet red peppers are great additions too!

Slider Buns. It is hard to make sliders without slider buns, and they are so many kinds to choose from it can be hard to decide. I went with a basic bun, but feel free to grab your favorite buns because it is your game-day food-eating marathon, so go ahead and spoil yourself!

Sour Cream. Horseradish. Worcestershire Sauce. Pickle Juice. These four ingredients are used to make the horseradish sauce; it is so good. I also added a pinch or two of freshly cracked black peppercorns just because who does not like a bit of pepper? And yes, I said pickle juice! 

Swiss & Provolone Cheese. I love the combination of Swiss and Provolone cheese; it is so good! But don’t let me stop you from using your favorite cheese combinations because delicious is always a personal choice. 

Au Jus. If you have not dipped a cheesy roast beef slider into hot au jus, then you are missing out big time! Our easy au jus comes together with no fuss with a mix of beef stock, French onion mix, Worcestershire sauce, and extra virgin olive oil.

How to make French Dip Sliders

Ingredients: 

12 Servings

  • 12 slider buns
  • 1 stick softened unsalted butter
  • 1/2 tbsp freshly cracked black peppercorns
  • 24 mini slices of swiss cheese
  • 12 mini Mozzarella, provolone, or fontina slices
  • 1 large yellow or sweet onion
  • 2 tbsp of unsalted butter
  • 2 tbsp of extra virgin olive oil
  • your favorite pickles for serving

Directions:

  1. Preheat oven to 350°.
  2. Make the Au Jus (see directions below).
  3. Make the Horseradish Sauce (see directions below).
  4. Make the black pepper butter: Add one stick of softened unsalted butter to a bowl. Add a half tablespoon of freshly cracked black peppercorns. 
  5. Place the bottom of the slider buns on a cooking sheet and slather each one with a healthy dollop of black pepper butter.
  6. Set a large skillet on the stovetop over medium heat, add a tablespoon of butter and a tablespoon of extra virgin olive oil; when the oil is hot, toast the buns until the edges are golden brown. Remove the buns and repeat the process with the top buns. Set aside. 
  7. Arrange the toasted bun bottoms on a sheet pan and a tablespoon of the horseradish sauce to each bun. Add a slice of Swiss and a slice of Provolone cheese.
  8. Add grilled onions and a generous amount of roast beast, then top with two more slices of cheese. *Do not add the top buns yet. Place the sliders into the preheated oven for 12-14 minutes. Slide the rack out and add the top buns. Cover the sliders with a length of aluminum foil and slide them back into the oven and back for an additional 2-3 minutes.

How to make your own Sesame Seed Sliders

If you can’t find sesame seed or onion roll sliders make your own, here’s how. Combine 3 tablespoons of unsalted butter with a single tablespoon of honey into a small bowl—and microwave for one minute.

Brush the tops of the buns with the melted butter and honey mixture. Top buns with either sesame seeds or dried onions, or both! 

Serve immediately with the au jus and pickles on the side.

Horseradish Sauce Recipe

  • 1/2 cup sour cream
  • 1/3 cup horseradish sauce
  • 1 tbsp pickle juice
  • 1/2 tsp Worcestershire sauce
  • pinch of freshly cracked black peppercorns
  • pinch of sea salt optional

Directions:

  1. Mix well, and set aside or place the bowl inside the fridge until you are ready to make the sliders. You can make the Horseradish sauce ahead of time.

Au Jus Recipe

  • 2 cups beef stock or broth
  • 2 -3 tbsp of french onion soup mix
  • 1 tbsp of Worcestershire sauce
  • 1 tbsp of extra virgin olive oil

Directions:

  1. Place a small saucepan over low heat and add the beef stock or broth, French onion mix, Worcestershire sauce, and extra virgin olive oil; stir until the mixture is well combined.
  2. When the mixture begins to boil, remove the saucepan from heat, cover with a tight-fitting lid, and set it aside until you are ready to serve the sliders.

Can I use another kind of meat? 

Absolutely. Thinly sliced chicken, turkey, or pork are all excellent options.

What kind of cheese melts the best? 

The melting cheeses are Mozzarella, Fontina, and Cheddar. But even though Mozzarella makes for gooey cheese pulls, it has a bland taste.

Try layering one or two of the cheeses above with a good Gruyère, Fontina, or Provolone, or try something unexpected but still incredibly good like a Raclette.

You cannot go wrong with a good Pepper Jack cheese for those who love a little bit of heat.
