This tater tot breakfast casserole with sausage is meat for all you breakfast lovers out there. Cheesy, loaded with flavorful sausage, eggs, and crispy tater tots in every single bite. A great breakfast, brunch, or even holiday morning breakfast.

Breakfast, or should I say brunch is one of my favorite meals of the day. And it doesn’t matter if I’m having breakfast for breakfast, or lunch or dinner. That’s the cool thing about breakfast; it’s a versatile meal you can have any time of the day. When you think of a casserole, you may only think of a casserole to serve at dinnertime. However, casseroles are also versatile in which you can make one for any meal. I love this casserole because we’re using tater tots, and we can make it the night before, saving time in the morning. 

This hearty casserole includes sausage, ham, cream cheese, milk, bacon, eggs, tater tots, and more. Let’s dig in to this recipe by sharing some tips on making our overnight breakfast casserole with sausage and ham. Be sure to check out our other breakfast casserole recipe.

Expert Tips and Variations For Making This Breakfast Casserole 

  • Change up the meat used; you can use one type of meat or opt for a variety of meats like I did here. Or you can leave the meat out and make it a meatless breakfast idea. 
  • Swap Colby jack with pepper jack cheese for a nice kick, or even sharp cheddar. 
  • Frozen tater tots are best, they will bake up golden brown. 
  • Dice up some bell peppers and stir in the egg mixture for added flavor. 
  • If you want go ahead and use egg whites to replace whole eggs if you prefer. I find it tastes best with whole eggs. 
  • You can make a larger batch or smaller if you want.

Can You Freeze This Tater Tot Casserole 

Absolutely! You are more than welcome to freeze any of the tater tot casserole you don’t plan to eat right away. Just store in an airtight container in the freezer. Cover with aluminum foil and bake at 350 for 30 minutes. Uncover and finish baking until warmed all the way through.

What to Serve With The Casserole 

Add some green onions on top, sour cream, salsa, etc. Dress it up as you would like, then in terms of sides, you could do a fruit salad, toast, etc. This breakfast casserole can be a meal in one since it is loaded with potatoes, meat, eggs, and cheesy goodness.

How to Know When Breakfast Tater Tot Casserole Is Done

The key to this casserole is being done is that the eggs are fully cooked. You will know it is done when the top of the tater tots are nice and golden brown. Then you will find if you stick a knife in and make sure no wet eggs come up when you lift the knife up. 

The thicker your casserole is, the longer it can take to bake up. If you make it thinner, it will cook faster in the oven.

How Long Can I Store This Breakfast Casserole in The Fridge? 

All leftovers can be stored for up to three days. When you are looking to eat some, slice off what you plan to eat, then heat in the microwave for a quick reheat. Or you can cover it tightly in the oven and cook it that way. You just want to ensure the casserole is heated all the way through.

How to make Overnight Tater Tot Breakfast Casserole With Sausage

Serves: 6-8
Prep Time: 15 Minutes
Bake Time: 60-65 Minutes

Ingredients:

  • 1 cup of chopped ham 
  • 1 ½ cup of ground pork sausage (cooked + crumbled)
  • 1 bag of frozen tater tots
  • 8 eggs
  • ¼ cup of chive & onion cream cheese
  • 1 cup of milk
  • 1 ½ cup of shredded colby jack cheese
  • 1 tbsp of dried chives
  • ½ cup bacon (cookies + chopped)
  • ½ tsp salt & black pepper to taste

Directions:

  1. In a medium bowl, combine the eggs, cream cheese, chives, and milk. Whisk together. Set aside.
  2. In a large bowl, combine one bag of frozen tater tots, chopped ham, cooked sausage, and shredded cheese. Mix around gently.
  3. Pour tater tot mixture into a greased 11×13 casserole dish.
  4. Next, pour your egg mixture into the dish as well, right over the tater tots (evenly).
  5. Sprinkle ½ tsp of salt and black pepper evenly over the top. (Optional)
  6. At this point, if you’re making it the night before, now would be the time to cover it with foil and place it in the fridge!
  7. When you’re ready to bake, preheat your oven to 350 degrees. Remove casserole from fridge and let it sit on the counter while the oven preheats.
  8. When the oven is ready, place the casserole in the oven and bake for about 60 minutes—turning the dish around halfway through.
  9. The casserole is done when the eggs set, the tater tots are golden brown, and the casserole is bubbling. Remove from oven.
  10. It will firm up a little as it sits in the hot dish while cooling.
  11. After it cools for about 8 minutes, add chopped bacon all over the top!
  12. Cut the casserole into squares and serve!

You can also bake this as soon as you’ve finished assembling it. It’s not necessary to refrigerate it overnight but, you can see that it’s fully prepared. Then all you have to do is place it in the oven in the morning!
