Directions for Slow Cooker Chicken Noodle Soup
Add the 2 tbs. of oil to a frying pan and heat. Saute the celery, carrots and onion for 5-10 minutes.
Next, add ALL the ingredients to the slow cooker along with the broth and some salt and pepper to taste.
Cook on low 3-4 hours in the slow cooker.
About 1 hour prior to serving cook the eggs noodles separately as directed on the package. Add a few handfuls into the soup and let simmer in the soup for about 1 hour. I'll be honest, I usually don't measure at this point.
If I end up need more broth, I simply add some more into the slow cooker.
Serve with crackers.
