This rocky road candy bar takes just 10 minutes to make and is loaded with soft pillowy marshmallows, crunchy peanuts, smothered in delicious chocolate, and finished off with sprinkles. If you are in the mood for a tasty Valentine’s day dessert, give this rocky road bar recipe a go!

Rock road is always such a dynamic blend of flavors. Sweet and creamy chocolate, marshmallows, and nuts. This candy bar recipe allows you to enjoy all the favorite flavors you love! These bars are great to make for after dinner, bake sales, slumber party snacks, and even the occasional midnight snacking. If you have younger kids, they might like to help roll up their sleeves and mix parts of this recipe up. This recipe would be fun to set up in a hot cocoa valentine’s day themed bar!

Best Chocolate To Use 

I reached for a bag of semi-sweet chocolate chips. If you want, you can use baking chocolate if you prefer. Now, go right ahead and reach for milk chocolate if you prefer milder flavored chocolate. I find the semi-sweet taste incredible with the nuts and marshmallows.

Is Evaporated Milk And Sweetened Condensed Milk Interchangeable

Evaporated milk and sweetened condensed milk are two different ingredients. Evaporated milk is more like a milk texture. Where sweetened condensed is very thick and creamy, these two ingredients can’t be swapped.

How To Make Rocky Road Bars 

Melting Chocolate | Add in your chocolate chips, butter, and condensed milk. Heat until you have all the chocolate chips melted. Make sure to stir often, or the chocolate can burn. Allow the mixture to cool for a few minutes. 

Nuts and Marshmallows | Now, pour the nuts and marshmallows in and stir until it is incorporated. Then pour into your pan as directed in the recipe card below. 

Setting Up | Allow your bars to set up and the chocolate to harden up. Then slice and serve up these tasty road bars.

Tips and Variations To Rocky Road Bar Recipe 

  • Instead of dry roasted peanuts, do a salted peanut. It will add more sweet and salty flavor to the recipe. 
  • Consider using the fruity mini marshmallows. It will add a different flavor to your bars and a pop of color. 
  • You can make these bars a day in advance of when you plan to serve them up. 
  • If you double the recipe, use two pans. 
  • Leave out the sprinkles and such for a non-Valentine’s treat.
  • You could add in chopped almonds or pecans instead of peanuts if you prefer. 

Storage

Refrigerator | These bars can be stored in the fridge for up to a week. Make sure they are thoroughly cooled before you place them in your container. You can use a bag or airtight container. 

Freezing | If you don’t plan to eat all these bars right away but want to save them, you can. Wrap the bars in aluminum foil and place them in a freezer container or bag. Freeze the bars for up to three months. Thaw in the fridge overnight before you plan to serve them up.

Why is my Rocky Road Not setting?

This rocky road needs time to set up. That is why it needs to be covered and then placed in the fridge for a few hours. If you skip this step, you will find the bars kind of fall apart and make a mess. 

Suppose you want a quick setting rocky road to add a tablespoon of shortening in with the chocolate chips and milk when you warm it up. That will speed up the setting up process significantly. 

Can I use large marshmallows for rocky road? 

Go right ahead and use larger marshmallows for the rocky road if that is what you have. You can take the time to slice them up into four pieces for a smaller bite or even cut them in half. If you leave them whole, you might find it doesn’t mix thoroughly with the rest of the ingredients as the marshmallows are larger and can overpower the rest of the ingredients.

  • 2 1/2 cups Dry Roasted Peanuts

Directions on making easy Rocky Road Candy Bars

  1. Line 13×9 pan with parchment or wax paper.
  2. Melt chocolate chips, butter, and condensed milk in a medium to a large pan over medium/low heat, constantly stirring to keep it from scorching.
  3. Once melted, remove the chocolate mixture from heat and allow it to cool slightly.
  4. Stir peanuts and marshmallows into chocolate mixture.
  5. Spread rocky road mixture into prepared pan and add Valentine’s sprinkles and/or candy decorations as desired.
  6. Chill until set, approximately 2 – 3 hours.
  7. Cut into squares and serve.

1. Chopped pecans or walnuts can be substituted for peanuts for preference or those with allergies.
2. Valentine’s sprinkles/decorations are optional.
