Turmeric Jasmine Rice Recipe Made In The Instant Pot With Roasted Chicken

Being a foodie is all about tasting delicious foods from across the globe; to limit your options to only the foods you’re familiar with isn’t what being a foodie is all about. Being a lover of food is about exploration, as much as it is about appreciating good food regardless of its origins. Our Turmeric Jasmine Rice using leftover roasted chicken is a nod to middle eastern food fare. It pays homage to some of the best rice dishes I have loved ever since I first tried middle eastern saffron rice for Lebanon rice, or lentils and rice with caramelized onions. Every one of these rice dishes is worth seeking out if you haven’t tried them. 

 

This is a great dish to make for a Middle Eastern-themed dinner party paired with tabouleh, hummus, and lamb kabob. Or it’s a stand-alone dish to prepare for a weeknight dinner. And, like most rice dishes, it tastes even better the next day after the flavors have time to meld. 

Turmeric Jasmine Rice + Leftover Roasted Chicken

Ingredients:

  • 2 cups jasmine rice
  • 4 cups chicken stock
  • 3 tablespoons extra virgin olive oil, divided
  • 1 1/2 tablespoons turmeric
  • 1 tablespoon ground coriander
  • 1/2 tablespoon cinnamon
  • 1/2 tablespoon cumin
  • 4-5 cloves garlic, minced
  • 1 large red bell pepper, diced
  • 1 cup parsley, chopped
  • 1 small yellow onion, chopped
  • 3-4 stalks green onion
  • 2 cups leftover roast chicken, chopped

Directions:

  1. Cook rice in an Instant Pot or rice cooker using chicken stock.
  2. Place a small skillet over med-high heat and add a tablespoon of E.V.O.O., when the oil is hot, add the chopped onion and minced garlic. Sauté until the onions are translucent. 
  3. Add the chopped red bell peppers and sauté for three more minutes, fold the onions, garlic, and red bell peppers into the rice mixture. 
  4. Place a large skillet over med-high heat and add extra virgin olive oil when the oil is hot begin frying the rice and add the turmeric, ground coriander, ground cinnamon, ground cumin, and mix well.
  5. Stir in the chopped roasted chicken and green onion until all of the ingredients are combined. 
  6. Remove the skillet from heat, and add the chopped parsley and more green onion.
  7. Serve.
