Riddle me this: What’s the perfect cocktail with all of the earmarks of summertime?

If you love strawberries and rhubarb, then you are in for one heck of a drinking experience.

The taste of fresh strawberries and the unique tang of rhubarb meld deliciously into this wonderful hand-crafted bourbon-based cocktail.

I’m calling this one a summertime recipe because rhubarb is hard to find during the winter months, at least here in Michigan.

This may be a seasonal drink for you, unless you like to freeze rhubarb, so I recommend getting your fill of this bourbon cocktail as much as possible this spring and summer.

Rhubarb & Strawberry Bourbon Cocktail - easy summer cocktail to try with fresh strawberries and rhubarb

How to make a bourbon cocktail using strawberries and rhubarb

Serving size: 1

Ingredients:

  • 1 1/2 ounce rhubarb strawberry syrup
  • 1 1/2 ounce bourbon
  • 3 ounces tonic water
  • 1/2 cup ice
  • strawberries and rhubarb for garnish

Directions:

  1. Add ice to the cocktail mixing glass along with rhubarb strawberry syrup, bourbon, and tonic water.
  2. Stir vigorously for 30 seconds using a long-handled bar spoon.
  3. Taste and adjust the sweetness with more syrup, if necessary.
  4. Pour into a rocks glass over fresh ice, garnish with rhubarb and fresh strawberries.
  5. Serve.

Can I Use A Different Syrup If I Don’t Have Rhubarb Strawberry Syrup?

Yes! You can substitute with a strawberry simple syrup or even a plain simple syrup, and add a splash of fresh rhubarb juice to get the tartness.

You could also use a pre-made fruit syrup of your choice, like raspberry or blackberry.

Can I Make The Rhubarb Strawberry Syrup At Home?

Absolutely! To make your rhubarb strawberry syrup, simmer equal parts water, sugar, chopped rhubarb, and strawberries until the fruit breaks down, then strain.

You can adjust the sweetness level to your liking.

Can I Use A Different Type Of Alcohol Instead Of Bourbon?

Yes! If you prefer something lighter, you can swap the bourbon for rum or gin.

However, bourbon adds a distinct depth to the cocktail that pairs nicely with the rhubarb and strawberries.

What Tonic Water Should I Use?

Any tonic water will work, but if you prefer a less bitter taste, opt for a less intense tonic or a flavored tonic water like elderflower or citrus.

Is This Cocktail Too Sweet?

The sweetness of the cocktail depends on how sweet your rhubarb strawberry syrup is and the tonic water used.

If it’s too sweet, you can reduce the syrup or use less tonic water. Adjust to your taste!

Can I Make This Cocktail Ahead Of Time?

This cocktail is best served fresh to maintain the flavors and carbonation from the tonic water.

However, you can pre-make the bourbon and syrup mix, then add tonic water and ice before serving.

    I’ve never had a drink with rhubarb before, so this is rather new to me. I may have to give it a shot just to see if I’ll like it, but I’m thinking with strawberries, I really can’t go wrong.
