Salmon Potato Bake Dinner Recipe

Here in the Worthey home, salmon is always a quick and easy dinner idea. From our Honey Pineapple Salmon dinner idea to easy Salmon Tacos + Watermelon Slaw. Salmon is a versatile dish, with so many delicious ways to make it. It makes for savory brunch sliders, like the one we recently shared with Dave’s Killer Bread English muffins. If you’re at the point where you want to try something dinner (since we’ve been stuck at home for months and months now), then give this combination a try. It’s a meat and potatoes dish, which is the type of food I was raised on, and honestly, it never gets old. I brushed the salmon with homemade herb butter and popped it in the oven for 45 minutes at 400 degrees.

Then I grabbed a large sweet potato and half a dozen Yukon Gold potatoes, peeled, quartered, and boiled them. After those suckers were fork tender, I drained off the water, added a stick of butter, extra virgin olive oil, an assortment of chopped fresh sweet basil, thyme, and oregano. I grabbed the potato masher and got my mash on big time. Then I added sea salt, and freshly cracked black peppercorns, and a cup of grated Parmesan and continued mashing. I also added 1/4 cup of heavy cream, but you can use half-n-half or even whole milk.

Salmon. I used one large salmon filet baked whole and cut in half to serve. I made a marinade using herbs, melted butter, extra virgin olive oil, sea salt, Old Bay seasoning, and freshly cracked black peppercorns.

Potatoes. For the mashed potatoes, I used one pound of sweet potatoes, and two pounds of Yukon Gold potatoes, a stick of butter, a cup of half-n-half, or whole milk, an assortment of herbs like fresh thyme, savory, basil, and oregano. I added sea salt or Kosher salt and freshly cracked black peppercorns to taste. 

Butter, Half-n-Half & Herbs. This recipe isn’t for the faint of heart; I use butter in the salmon recipe and the mashed potatoes. You can also use ghee, or a vegan variety of butter as well. I used half-n-half, but if you want to go dairy-free, use unsweetened almond milk or any plant-based milk you prefer. When it comes to herbs, I prefer fresh, but use dried varieties as well. I grabbed fresh basil, oregano, savory, and thyme from our family garden.

How to cook the Salmon

Ingredients:

  • 1 large filet of salmon with skin removed or intact
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 sticks melted butter
  • 1 teaspoon sea salt or Kosher salt
  • 1 teaspoon freshly ground black peppercorns
  • 1/2 tablespoon granulated garlic powder
  • 1 tablespoon Old Bay seasoning
  • 1 cup of fresh herb mix (I used rosemary, thyme, oregano, and savory) roughly chopped. 

Directions:

  1. Preheat oven to 400 degrees.
  2. Into a saucepan melt a stick of butter, allow the butter to come to a slow simmer and add the fresh herbs and stir, remove the pan from the heat and cover with a tight-fitting lid. Allow the butter to steep for ten minutes. 
  3. Remove the salmon from the packaging, and pat dry using paper towels.
  4. Season the salmon on both sides of the salmon with sea salt, freshly cracked black peppercorns, Old Bay seasoning, and granulated garlic powder. 
  5. Line a high-walled baking sheet with aluminum foil, place the salmon skin-side down on the baking sheet and brush the salmon with the melted herb butter.
  6. Place the salmon on the center rack of the preheated oven and bake for 45-60 minutes. 
  7. Remove from the oven and serve.

Savory Potato Recipe

Ingredients:

  • 1 pound sweet potatoes, cut into 1-inch cubes
  • 2 pounds Yukon gold or russet potatoes cut into 1-inch cubes
  • 1/2 cup whole milk
  • 1/2 cup heavy cream
  • 1 stick unsalted butter
  • 1/3 cup flat-leaf parsley
  • 2 tablespoon rosemary, minced
  • 1 1/2 cups grated Parmesan
  • sea salt to taste
  • freshly cracked black peppercorns to taste

Directions:

  1. Cut potatoes into 1-inch pieces and place them into a large stockpot, fill the pot with cold water until the water is 1 1/2 – 2-inches over the potatoes.
  2. Set the pot over medium-high heat, and add a heaping tablespoon of Kosher salt, bring the water to a boil, then reduce to medium heat, continue cooking until the potatoes are fork-tender in 15-20 minutes.
  3. Using a colander, strain off the water and return the potatoes to the pot and add whole milk, heavy cream, butter, parsley, rosemary, sea salt, and freshly cracked black peppercorns.
  4. Mashed the potatoes thoroughly with a potato masher until the ingredients are fully incorporated. If you want creamier potatoes add additional whole milk, add Parmesan, and mix well. Add extra salt and black pepper if necessary.  
  5. Serve with Baked Salmon.
